How to Make the Best Grilled Vegetables: Step-by-Step Guide

Follow these simple steps to achieve perfectly grilled, tender, and flavorful vegetables every time:

  • Step 1: Prepare Your Vegetables and Grilling Tray. Begin by thoroughly washing and drying all your chosen vegetables. This step is crucial for achieving a good sear and preventing steaming. Once clean, cut the vegetables into uniform, bite-sized portions. Consistency in size ensures even cooking across the board. For a designated vegetable grilling tray, line it with Reynolds Wrap® Non-Stick Foil. If your tray has holes for direct heat, gently create small incisions in the foil over these holes to allow heat and smoke to pass through effectively, while still enjoying the non-stick benefits.

  • Step 2: Season Your Veggies to Perfection. Transfer your prepared vegetables to a large bowl. Generously spray them with avocado oil. This helps the seasonings adhere and promotes a beautiful char without sticking. Then, sprinkle with your roasted vegetable seasoning (or Italian blend), salt, and freshly cracked black pepper. Toss everything well to ensure all the vegetables are evenly coated. If your seasoning blend is already salty, you may want to reduce the amount of added salt.

  • Step 3: Grill to Tender, Smoky Perfection. Preheat your grill to a medium-high heat. Once hot, carefully arrange the seasoned vegetables on the foil-lined grilling tray or directly on Reynolds Wrap® Non-Stick Foil placed on the grates. Grill for approximately 5-10 minutes. The exact cooking time will vary depending on the type and size of your vegetables and your grill’s heat. Remember to turn the vegetables halfway through the grilling process to ensure even cooking and beautiful charring on all sides. Look for tender-crisp textures and visible grill marks.

Serve immediately and savor the incredible flavors of your perfectly grilled summer vegetables!

Expert Recipe Notes and Grilling Tips for Success

Achieving perfectly grilled vegetables is an art, and these tips will help you master it:

  • Uniformity is Key: Always cut all your vegetables to a similar size and thickness. This ensures they cook evenly and are ready at the same time, preventing some from being undercooked while others are burnt.
  • Maximize Surface Area: For quicker and more consistent cooking, cut vegetables into shapes that expose more surface area to the grill. Think strips, rounds, or planks. For example, bell peppers are great sliced into strips, and zucchini into thick rounds or spears.
  • Pair Similar Cooking Times: When mixing vegetables, try to group those that have similar cooking requirements. If using harder vegetables like carrots or potatoes, cut them thinner or par-boil them slightly before grilling to ensure they cook through at the same rate as softer veggies like zucchini.
  • Texture Contrast: Don’t be afraid to pair soft and harder vegetables. This creates a delightful range of textures on your platter, from tender to tender-crisp.
  • Potatoes on the Grill: If including potatoes, opt for mini potatoes and cut them in half. This significantly reduces their cooking time, making them suitable for grilling alongside other vegetables.
  • Add a Spicy Kick: For those who love a bit of heat, sprinkle some chili flakes over your vegetables before grilling. It adds a wonderful dimension of flavor.
  • Steaming Technique: If you prefer your vegetables to be steamed rather than directly charred, you can create convenient foil packets using Reynolds Wrap® Non-Stick Foil. Simply place the seasoned vegetables in the foil, seal the packet tightly, and place it on the grill. This method steams the vegetables in their own juices, resulting in tender, moist results.
  • Don’t Overcrowd the Grill: Grill your vegetables in batches if necessary. Overcrowding lowers the grill temperature and can lead to steaming instead of charring, resulting in limp vegetables.
  • Oil the Vegetables, Not the Grill: While the non-stick foil helps, always ensure your vegetables are lightly coated in oil. This not only helps with non-sticking but also ensures seasonings adhere and promotes browning.

Frequently Asked Questions About Grilled Vegetables

Let’s address some common questions to help you become a grilling master:

What are the Best Vegetables for Grilling?

Grilling truly unlocks the natural sweetness and adds a beloved smoky char to a wide array of vegetables. Here are some of my top recommendations that excel on the grill:

  • Tomatoes: Cherry tomatoes are perfect grilled whole, becoming burstingly juicy. Larger tomatoes can be sliced into thick rounds.
  • Zucchini: Both green and yellow zucchini work perfectly. Slice them into spears or thick rounds for optimal grilling.
  • Bell Peppers: These vibrant vegetables adore the grill, becoming incredibly sweet and tender with beautiful char marks. Slice bell peppers into strips and remove seeds before grilling for the easiest eating.
  • Mushrooms: Grill whole button mushrooms, cremini, or portobello caps. No need to slice; the whole mushroom retains its moisture and develops a meaty texture.
  • Eggplant: Grilled eggplant is truly divine! Slice into thick rounds or planks for a substantial and smoky side.
  • Carrots: Grilling quickly softens carrots and concentrates their sugars, making them wonderfully sweet and tender-crisp. Opt for smaller or thinly sliced carrots.
  • Onions: Any variety, including red, yellow, or even green onions, transforms into a sweet and mellow delight when grilled. Slice large onions into thick rings or wedges.
  • Asparagus: A quick grill gives asparagus a wonderful crunch and char. Finish with a sprinkle of Parmesan cheese for an extra treat.
  • Corn on the Cob: It doesn’t get easier than this – just throw whole cobs directly on the grill for the easiest, most flavorful roasted corn.
  • Artichokes: Pre-steamed or boiled artichoke halves become incredibly juicy and delicious with a smoky char.
  • Cauliflower: Slice cauliflower into thick “steaks” so they hold their structure on the grill. The florets become sweet and smoky.
  • Broccoli: Like cauliflower, broccoli can be grilled as “steaks” or in larger florets.
  • Romaine Lettuce: Yes, lettuce! Give this a try for a surprising and delicious side. A quick grill adds a sweet, smoky char that’s incredibly tasty, especially with a light dressing.

What to Serve on These Grilled Vegetables?

While grilled veggies are fantastic on their own, you can certainly elevate them with various toppings and drizzles for added flavor dimensions:

  • Cheeses: Sprinkle your warm grilled vegetables with shaved Parmesan cheese, crumbled feta, or tangy goat cheese for a creamy, savory touch.
  • Sauces and Dressings: Drizzle with a vibrant salsa verde, a zesty chimichurri sauce, a sweet and tangy balsamic glaze, or even a classic vinaigrette.
  • Herbs and Pesto: A spoonful of fresh pesto or a sprinkle of chopped fresh herbs like parsley, basil, or cilantro can add brightness and aromatic appeal.

What to Eat with These Grilled Vegetables?

These versatile grilled vegetables are the perfect accompaniment to a wide variety of delicious main courses. Consider pairing them with:

  • Grilled Harissa Chicken Thighs
  • Savory Beef Kabobs
  • Zesty Grilled Chili Lime Shrimp
  • Classic Grilled Steak and Potatoes
