Essential Ingredients for White Chicken Lasagna Soup
Crafting this incredible soup begins with selecting the right ingredients. Each component plays a vital role in building the layers of flavor and achieving that signature creamy texture. Here’s what you’ll need, along with insights into their contribution:

- Olive Oil and Unsalted Butter: A combination of olive oil is used for searing the chicken, providing a high heat point and a subtle fruity note. Unsalted butter is then added for sautéing vegetables, contributing a rich, dairy depth to the base of the soup.
- Chicken: Boneless, skinless chicken breasts, diced into bite-sized pieces, are ideal for this recipe. They cook quickly and absorb the flavors of the broth, becoming incredibly tender. You can also use chicken thighs for a slightly richer flavor.
- Aromatic Vegetables: Finely chopped yellow onion, minced garlic, and sliced mushrooms form the aromatic foundation of the soup. Onions and garlic provide essential savory notes, while mushrooms add an earthy depth and umami richness that complements the chicken beautifully.
- All-Purpose Flour: A few tablespoons of flour are crucial for creating a smooth, thick roux. This acts as a thickening agent, giving the soup its luxurious, creamy consistency without being too heavy.
- Chicken Broth: High-quality chicken broth serves as the primary liquid base, infusing the soup with robust chicken flavor and ensuring a perfect soup-like consistency. Opt for low-sodium broth to better control the overall saltiness.
- Robust Seasonings: A carefully chosen blend of Italian seasonings, dried basil, dried thyme, ground black pepper, and salt elevates the flavor profile. These herbs and spices are classic complements to both chicken and lasagna, bringing an authentic Italian essence to the dish.
- Lasagna Noodles: The star pasta! Uncooked lasagna noodles are broken into random, smaller pieces, allowing them to cook directly in the soup and mimic the layers of a traditional lasagna. Their wide, flat shape is perfect for absorbing the creamy broth.
- Cream Cheese and Heavy Cream: These dairy powerhouses are key to achieving the signature creamy, rich, and indulgent texture of the white lasagna soup. Cream cheese adds a tangy depth and helps emulsify the sauce, while heavy cream contributes unparalleled richness.
- Assorted Cheeses: A triumvirate of cheeses—ricotta, parmesan, and mozzarella—provides that quintessential cheesy lasagna taste and texture. Ricotta offers a delicate creaminess, parmesan a salty, nutty bite, and mozzarella a wonderful stretch and gooeyness.
- Fresh Parsley: Chopped fresh parsley is used as a garnish, not only adding a vibrant burst of color but also a fresh, herbaceous counterpoint that brightens the rich flavors of the soup.
How To Make White Chicken Lasagna Soup: A Step-by-Step Guide
Creating this satisfying one-pot soup is simpler than you might imagine. Follow these detailed steps to bring this creamy, cheesy comfort food to your table:

- Step 1: Cook the Chicken. Begin by heating a heavy-bottomed pot, such as a Dutch oven, over medium-high heat. Add the olive oil, and once shimmering, add the cubed boneless, skinless chicken breasts. Cook for 4-5 minutes, stirring occasionally, until the chicken is thoroughly cooked through and lightly browned on all sides. Transfer the cooked chicken to a clean plate and set it aside; you’ll add it back later.

- Step 2: Sauté the Vegetables. Using the same pot (no need to clean it!), add the unsalted butter. Once the butter has melted and is gently bubbling, add the chopped yellow onions, minced garlic, and sliced mushrooms. Sauté for 3-5 minutes, stirring frequently, until the onions are softened, the garlic is fragrant, and the mushrooms have released their moisture and begun to brown slightly.
- Step 3: Prepare the Broth Base. Sprinkle the all-purpose flour over the sautéed vegetables and cook for an additional minute, stirring constantly. This step creates a roux, which will thicken the soup. Gradually pour in the chicken broth, whisking continuously to prevent lumps. Stir in the Italian seasonings, dried thyme, dried basil, ground black pepper, and salt. Bring the mixture to a gentle boil, ensuring all ingredients are well combined.

- Step 4: Cook the Lasagna Noodles. Carefully add the broken lasagna noodles to the boiling broth. Stir well to ensure the noodles are submerged and don’t stick together. Cover the pot and reduce the heat to medium-low. Allow the soup to simmer for approximately 10 minutes, or until the noodles are al dente. Stir occasionally to prevent sticking.

- Step 5: Achieve Creaminess. Return the cooked chicken back to the pot. Add the cream cheese and heavy cream. Stir gently until the cream cheese is fully melted and incorporated into the soup, creating a smooth, luscious broth. Continue cooking on a medium flame for a few more minutes, ensuring the pasta is perfectly cooked through and the soup is heated evenly. Taste and adjust seasonings as needed.

- Step 6: Garnish and Serve. Once the soup is ready, ladle generous portions into individual serving bowls. For an authentic lasagna experience, top each bowl with a dollop of ricotta cheese, a sprinkle of fresh mozzarella cheese, and a generous dusting of grated Parmesan cheese. Finish with a vibrant garnish of fresh chopped parsley for both color and a touch of fresh herbaceousness. Serve immediately and enjoy!

Expert Tips for the Best Creamy Lasagna Soup
Achieving the perfect Creamy White Chicken Lasagna Soup is easy with a few insider tips. These suggestions will help you enhance flavors, customize your dish, and handle leftovers like a pro:
- Utilize Leftover Chicken: For an even quicker meal, substitute the cubed chicken breasts with leftover cooked chicken, such as shredded rotisserie chicken. Simply stir it in during the last few minutes of cooking to heat through, saving you valuable prep time.
- Boost Your Veggies: Enhance the nutritional value and complexity of your soup by adding more vegetables. Carrots, bell peppers, spinach, or kale are excellent choices. Add carrots and bell peppers with the onions and mushrooms, and stir in spinach or kale during the last 5 minutes of cooking until wilted.
- Pasta Alternatives: While lasagna noodles are classic, feel free to use your favorite pasta shape. Penne, rotini, or even small shells work wonderfully. Adjust cooking times according to the pasta package directions to ensure they are cooked al dente in the soup.
- Elevate Garlic Flavor: For a richer, more mellow, and less pungent garlic flavor, try using roasted garlic instead of fresh minced garlic. Simply roast whole garlic heads until soft, squeeze out the cloves, and mash them before adding to the soup base.
- Healthier Options: To reduce the calorie and fat content without sacrificing too much creaminess, opt for low-fat cream cheese and half-and-half instead of heavy cream. This will result in a lighter, yet still delicious, version of the soup.
- Choose Freshly Grated Cheese: Always use freshly grated Parmesan and mozzarella cheese. Pre-shredded cheeses often contain anti-caking agents that can prevent them from melting smoothly, leading to a grainy texture. Freshly grated cheese melts beautifully, ensuring a silky, cheesy broth.
- Managing Pasta Absorption: Be aware that the pasta will continue to absorb liquid as the soup sits, especially as leftovers cool. When reheating the soup, you may need to add a splash of additional chicken broth or water to achieve your desired consistency.
- Don’t Overcook the Noodles: Lasagna noodles can get mushy if overcooked. Keep an eye on them and remove the soup from the heat as soon as they reach al dente. They will continue to soften slightly as the soup rests.
Frequently Asked Questions About Lasagna Soup
Here are answers to some common questions you might have about making and enjoying this delicious White Chicken Lasagna Soup:
Absolutely! This recipe is perfect for utilizing leftover cooked chicken. Simply chop up any leftover chicken breast or add shredded rotisserie chicken during the last step, allowing it to heat through. This makes the meal even quicker and easier to prepare.
Yes, you can adapt this recipe for a slow cooker. Begin by cooking the chicken and sautéing the vegetables with the flour in a skillet on the stovetop for a few minutes. Then, transfer everything to your crockpot along with the chicken broth and seasonings. Cover and cook on low for 6-8 hours or on high for 2-3 hours. About 30 minutes before you plan to serve, stir in the broken lasagna noodles, cream cheese, and heavy cream. Cover again and continue cooking until the noodles are tender, checking for doneness in about 15-20 minutes.
Store any leftover soup in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm it over low heat on the stovetop, stirring occasionally, or in the microwave. You may need to add a splash of additional chicken broth or water to thin it out, as the noodles tend to absorb liquid as they sit. Top with fresh cheese before serving for best results.
While many soups freeze well, those with cream cheese and heavy cream can sometimes develop textural changes upon freezing and thawing, such as separation. If you plan to freeze this soup, it’s best to prepare the base and leave out the cream cheese and heavy cream. Add these dairy components when you reheat the soup. Without the dairy, the soup base can be frozen in an airtight container for up to 3 months. Thaw overnight in the refrigerator before reheating and stirring in the cream and cheese.
This white lasagna soup is wonderfully filling and satisfying on its own, making it a complete meal. However, it pairs beautifully with light sides to round out your dinner. Consider serving it alongside Cheesy Pesto Breadsticks for dipping, a crisp green salad with a light vinaigrette, or warm Sweet Hawaiian Rolls to soak up every last drop of that creamy broth.
