Instructions 

  • Preheat the oven to 400°F (200°C). Line a baking tray with parchment paper and set aside.
  • Pat the turkey breast dry with a kitchen towel. Slice it horizontally almost all the way through to open it like a book. Pound it to an even thickness of about ½ to ¾ inch.
  • For the filling, mix softened cream cheese, chopped spinach, sliced Kalamata olives, minced garlic, dried rosemary, dried thyme, salt, and pepper in a large bowl until well combined.
  • Spread the filling evenly over the turkey breast, leaving a ½-inch border. Roll it tightly from one end to the other to form a compact log.
  • Brush the outside of the turkey roll with melted butter. In a separate small bowl, combine paprika, onion powder, garlic powder, salt, and pepper for the outer seasoning. Sprinkle this mixture generously over the buttered roll. Tie with kitchen twine at 1-inch intervals to secure the roll’s shape.
  • Place the tied turkey roll seam-side down on the prepared baking tray. Bake for 30-35 minutes, or until the internal temperature reaches 160°F (71°C). For the last 2-3 minutes, broil to achieve a golden, crispy skin (watch carefully to prevent burning).
  • Let the turkey rest on a cutting board for 10 minutes before removing the twine, slicing, and serving warm.

  • Pound the Turkey Evenly: Flattening the turkey helps with even cooking and makes rolling easier.
  • Don’t Overfill the Roll: Too much stuffing can make it difficult to roll and cause it to burst open while cooking.
